Hi There!

4 weeks ago, we bought some vacuum sealed freshly butchered
venison from the butcher (who is closed in weekends) and he
advised us to let it sit 3 weeks in the fridge before using
to ensure flavours were the best they could be, and meat
tender. Its been 4 weeks, is it still ok to eat? How long
should vacuum sealed meats last?

It will be fine, in fact venison improves with a few weeks of aging.
Vacuum sealed meat has a long storage time.

I think you'd actually need to break the seal, to get it to start
aging.

Vacuum sealed meat has a long storage time.
It'll keep for a good week after opening if kept in a sealed container
in the fridge. It will start to "age" (darken) within about 3 days
and after this will be tastier and more tender than fresh outta the
vacuum pack.

My old man went deer-stalking every few weeks and always bought home
2-3 carcases, these used to hang for ages in the barn. Must have been
weeks or months. We never suffered, nor did any of the friends and
rellies he gave the surplus away to.

That seems to be the thing to do with venison

Venison needs to be hung for a minmum of three weeks.Otherwise it is as
tough as boot leather .

not strictly true. Depends on the beast. We had 2 lots of fresh venison
given to us a couple of weeks ago. Both were fairly fresh - the oldest was
maybe a week old - tender, tasty, not gamey at all.

I do not know about the vacuum sealed meat butif you have a leg shot on the
hoof hang it until rigor mortis has passed. It may even go a little green
on the outside before the flavour is really developed.

Lasts a lot longer when not slaughtered.
